Salsa is the Spanish word for sauce. In English-speaking countries it refers to a variety of sauces usually made with tomatoes, jalapeno peppers, onion, garlic and cilantro, similar to the salsa roja (red sauce) used as a condiment in Mexican and southwestern cuisine. Also common in and unique to those cuisines is the salsa verde, (green sauce) made with tomatillos.
Other salsas exist; for instance, some of them are made with mint, pineapple, or cantaloupe.
